Opened in 1954 in Madison, the Cathay House was a Chinese restaurant with a weird, irresistible volcano façade on the outside, and an eruption of Chinese lanterns on the inside. They were known for their Egg Foo Young, Chow Mein, Chop Suey and “Chinese Spaghetti”, which was a Chinese vegetable stir-fry with cubed ham and pasta, topped with a slice of melted American cheese. Um…what?
