Tex-Mex is the cuisine of Texas, not Mexico. It is blissfully and deliberately inauthentic “Mexican” food — ground beef tacos, beef, chicken or cheese enchiladas and pork tamales. And since 1937, Felix Mexican Restaurant lovingly prepared all of these classics. But it was their queso that put them on the map — neon orange and classically Tex-Mex in flavor. And the famous Felix sign, with its sombrero-clad Mexican slumbering against a cactus, was a piece of Houston’s food history.
